The conical lid is typical of the tajine. It ensures that you have to use only a bit of water during preparation. The water vapour that arises in the tajine, will gather on the inside of the lid. The liquid will thus be maintained and give tasty tender meat or fish and delicious juicy vegetables as a result. The tajine is made of stoneware and suitable for use in the oven, on gas, ceramic and electric hobs. To avoid cracks in the stoneware tajine caused by high temperatures, it is recommended to soak the tajine in water during 24 hours before first use. Grease the inside of both the bottom and the lid with vegetable oil before you use it for the first time. Wash the tajine in warm soapy water, rinse and wipe off well.
